Chef Bill Feng

Born and raised in Guangzhou – city of gourmets, Chef Bill Feng, Executive sous chef at Grand Hyatt Guangzhou, made up his mind to become a chef ever since he felt the overwhelming passion for food and cooking.  In 2002, Chef Bill represented Guangzhou City to participate in the Youth Cooking Skills Competition with participants from Guangdong, Hong Kong and Macau.  Chef Bill won the competition aged just 21. In 2003, he was honoured as the ‘Young Star Chef’ in Guangdong Province.  In 2004, Bill joined the nationwide famous Guangzhou Jiujia and three years later then joined the Guangzhou branch of Hong Kong Liyuan Jiujia – a so-called Shaolin Temple for chefs, where he learned modern Cantonese cuisine.


Chef Bill joined The Penthouse, Grand Hyatt Guangzhou’s Chinese restaurant as Sous Chef in August 2009 and got the promotion as Executive sous chef on 2014. Chef Bill thrives in creating authentic Cantonese dishes with a modern twist by using fresh, seasonal ingredients based on guests’ various requests. His signature dishes like ‘Leopard Coral Grouper’ and ‘Alaska King Crab’ are popular with our guests. When talking about his inspiration for creating new dishes, Chef Bill says his inspiration comes from everyday life. He thinks of how to create new dishes when he’s on his way to work in the metro or on a bus. Once the inspiration hits, he notes it on his mobile phone, soon whole menus appear on his phone. Chef Bill works from 9 am to 10 pm daily, managing kitchen operations, tasting food and training other chefs. He likes to share his experience with colleagues and grow with the team. He feels great accomplishment when guests compliment his food.


Young yet experienced, Chef Bill has a dream like other young people: to travel and taste food from all over the world. However, the final purpose is to create and cook delicious food for his guests, and help people recognize Cantonese cuisine. He believes that there is no ‘best’ but there can always be better!  This belief keeps Chef Bill motivated to create dishes more delicious than the last.
